There are at least Caimans (relatives of gators) in the Amazon... The skunk looking animal is called a coatimundi, commonly abbreviated coati. I could picture the 2 kids catching a ride behind your boat and then falling out as their canoe jumped- I am sure that is a normal part of their day- what fun -- are there gators down there to swim away from?? Some of the beans and rice dishes sound good- the catfish? Not so much!! The little skunk-looking animal is so cute- are you going to bring any home??
